I have always loved noodles and one of the first things I wanted to do when I started eating keto was to find a simple way to have noodles in my diet again!
I tried various keto noodles and spiralising courgettes (zucchini), carrots and all manner of other vegetables.
But nothing really gave me that slippery, noodle gorgeousness that I was after.
Although these keto noodles are pretty good.
But then I hit upon an amazing (for me) discovery…. cabbage makes the perfect noodles!
All you need is one head of green cabbage.
Slice is as thinly as possible.
Put it in a microwave dish.
Sprinkle it liberally with Himalayan salt.
Add a few good slabs of butter.
Cover and microwave on high for 10 minutes and then stir thoroughly.
If someone had told me that I would be batty for keto noodles made from cabbage, I would have laughed in their face. But seriously, this really works!
You end up with slippery, buttery, noodle-y goodness that pretty much goes with anything.
I eat them noodles in a stir fry, or instead of spaghetti in a spaghetti bolognese. I will also cover them in keto chicken curry or just have them as a side accompaniment with some protein.
Cabbage noodles… who would have thought?
Seriously, don’t knock them ’til you try them!
And also don’t forget to put plenty of extra butter on!
